Yes, I'm an idiot.....Prints won't stick

I got my Ender 3 S1 Pro a few years ago. I did a few prints, made a few things. And then after a while I couldn't get anything to stick. I got frustrated and so haven't touched it in about a year and a half. I want to get doing this again but again frustrated. What am I doing wrong? I can post a video if it helps. I watch the nozzle and first time around it seems decent, but as I watch (never watched that close) seems like it may still be too high possibly? I did gouge the original bed nearly 2 years ago so afraid of doing that.

I reset the settings so Z offset was back to 0, then tried to level the bed (used the video at
). To get the nozzle to touch I have to set my z offset to -3.75 (or more). I go through leveling (tried to eyeball but my eyes are bad so used paper) and feel like it's good but nope. No matter what I do. Using PLA with nozzle set to 200 and bed currently at 65. I had a glass bed and was having issues so put on a HICTOP metal bed (had it for a while but never used) and still same issue. I'm so frustrated. I'm using Cura and tried the settings in the video to add to the start gcode, and tried not using them too. Makes no difference.

I have to walk away before I huck it out the window. I'm open to whatever (new bed, replacing parts, superglue whatever). Just feel like an idiot and frankly would hire someone to come and look at it but not sure where to even do that.

Have you tried Creality Print?
 
I can try another build plate but the one I have has a textured surface. May try again this weekend. So frustrated. Thanks
 
Also, try hairspray. It works well!
